Hi coucou, and Welcome to the Forum.

Where are you seeing it. I think that it is just the the Shift Key and period Key typed twice, >>. a single one > is known as the right arrow, and is used in FileMaker to represent Greater Than as an operator.

It's just an arbitrary character chosen to separate between the four elements of a row. The assumption here is that this character will not appear in the actual contents of any one of these elements (or at least not in the first three). You can use any other character for which this assumption will hold true.
