FM7 tables, what exactly are they?

i'm having some difficulties understanding the functions of tables in FM7. obviously, i'm a newbie for FM7 here and hoping someone could tell me in plain English about these tables as well as the advantages, disadvantages of these tables, when to use, when not to etc...
