spell-as-you-type is enabled but with no main dictionary, why?

Is there a way to enable main dictionary. I have tried to do this through the edit menu check spelling and choose dictionary. But edit dictionary is under edit is greyed out. Cannot figure out how to enable dictionary of any sort. Please help as our business is based on letter writing campaigns. Thank you.
