I'm pretty sure this will have been covered off in (multiple?) threads here, and I apologize for that but I searched the forums and nothing jumped out at me...anyways, if anyone can give me a few tips or point me in the right direction, it would be most appreciated!

We are getting a new Xserve that will be fully loaded and we are setting up a FM Server that will be gathering info on medical patients

The usual rule of thumb is that FMServer should run on its own dedicated box, and I stand by that. However, an XServe is such a powerful beast that you shouldn't run into much in the way of slowdown (especially if your solution is, indeed fairly simple.) The real issue with using the same box for purposes other than FMS is in data integrity. You must absolutely ensure that networked users have no OS-level access at all to the FileMaker files on the server. Their only path to the files should be via FileMaker Server. This means setting access privileges on the server, etc., and making sure that any backups are similarly isolated.

There is a White Paper on FMI's site (I can't remember the URL) called "FileMaker Server Best Practices" or something like that, and it details all the pitfalls and strategies you'll need to be aware of when configuring your FileMaker Server.
