I recently did an update of our DB and when I changed the Import field tag to the latest date it also changed the "created by" and "modified by" fields - how can I stop this from happening?

You need NOT to select the "perform Autoenter.." dialog when importing. But it can indeed be slightly more complicated if some of the autoenter are required while others isn't.

Is this the case here?
