Email returns incorrect date and ascii

What cause all mail from an FMP-filled webpage to arrive with an incorrect time? The webpages call to the linux mail server (SendMail) and always says it was sent 5 hours after it was. All other email, cgi mail scripts, etc. work fine, just FMP pages submitted give wrong date. I thought FMP would format with the current time on host machine.

Also, within these emails, if a field contains the "&" symbol, it returns the ascii code rather than the "&" symbol. Quick fixes?
