I like the Filemaker Pro Visual QuickStart Guide for beginners. It's at Amazon.com.

The "Filemaker Pro Bible" is a pretty good one too- it covers the basics, and gives you some intermediate stuff too for when you get beyond the basics. It too can be found on Amazon, Barnes&Noble, etc....
