For some reason, I can never access the Toolbar display option in the View Menu. It's always ghosted out! Surely I'm missing something obvious here. Can anyone help me??

Are you using OS X?

If so they are disabled in OSX (the OSX version is ghetto i find)

This may seem basic - but in version 6 you can have access to a script that "turns off" toolbars. If someone else made your solution, they coudl have this in a start up script. To "turn them on", write another script to do so.

Yeah I am running OSX, so it sounds like it might be the reason. I can only ask the obvious question. Why on earth would that seemingly simple function (yet incredibly handy on lots of layout work) be disabled????

Not so much 'disabled' as 'not yet enabled'. Look for it in a future release or update (the official line from FileMaker Inc seems to be "Check http://www.filemaker.com/support for updates.").

In the meantime, there might be a case for doing your more demanding layout work in 'classic' mode?!
