Intro to Serial Communication?

I really know nothing about serial devices.

I am on a Mac system and I am interested in building solutions which could communicate with "pole displays", serial mag stripe readers, and hopefully even merchant terminals.

Does anyone know of any good basic resources that would explain how to figure out how to communicate with devices like this?

I would probably be using the Troi Serial Plugin with a Keyspan Serial/USB adapter.
