Is is possible to print the entire contents of a scrolled text field when there is more text than is visible? (I know I can cut and paste the text into a word processor doc and print it that way).

no, fields cannot expand for printing. On your printing layout, you should make the text field bigger than you'd ever expect it to be, then set up sliding on the objects below so they slide up to fill in empty space.
