When I remove a field from the layout the field vanishes from the view as table also! How do I see it again so I can edit it? I don't want it on the layout becuase it is not something the users should be editing.....

Create a layout that only you can use. Or set security on the file that so only you with a particular password can update the field.

I usually create an "All Fields" layout just for this purpose. Then you can always get to the fields. You can make the layout invisible to the user by removing it from the Layout list shown in the Rolodex on the left in the layout setup.
