how can i add custom shortcut key (eg F5) to my scripts?

Not sure about the custom shortcuts, but you've got the first 10 scripts with shortcuts already - eg. Ctrl+1, Ctrl+2, Ctrl+3 etc.

Just select "Include in menu" and move them to the top of your list in scriptmaker.
