Is there a way to have a particular box or radio button already checked off as the default?

And how can I check to make sure only one box or button is checked?

Use the Auto-Entered Data in the field defination.

Radio Buttons are single selection, use them if you only want 1 item selected.

Checkboxes are multiple item selection, use them when you want multiple items selectable.
