How do I write a script that will export the data and directly open it in Excel?

Check out the "File Formats" that FileMaker can import and export in the manual, or Online Help, there are several that will work depending on what you need.

To open a file in Excel, use the "Open" File in Excel, or drop the file on either the Excel Application or an Alias.
