Is there a way to expand a field within a portal to the amount of text that is entered. If this is possible then I am also wondering if the defined portal area could also expand to the size of the expanding fields.

No, both the field's size and portal size are static.

For the field you could use a merge field, but you'd still be limited to the size of the portal row.
