before i go about spending time learing to use filemaker, how secure will my apps be in general?

Read the Help, nose around this Topic Area, and Read the FileMaker Manual, on Accounts and Privileges, and you should be able to satisfy your self on this topic. Version 8 is the most secure environment of all of the releases.
