quick question: is it possible to use plugins within a solution that will end up as a runtime/kiosk distribution?

No problem.

If it is a runtime AND a kiosk you do not need to do anything other than bind the solution with all plugins installed.

If it is kiosk only then each user will have to install all needed plugins independently

You can also just copy the required plug-in/s to the Extensions folder inside the runtime parent folder. Handy if the plug-in gets updated or you forget to put it in the FMA Extensions folder!
