Anyone have experience with developing Church Data Bases

What's a "Church Database"? And why does it matter? The fields are defined the same way.

A database is just a bunch of fields organized into tables, interrelated by whatever business logic. If you're looking for a contact manager, there are numerous examples, including those that come with the application. If you're looking for something to track your hymns, that's a little different. If you're looking for someone to custom build something that fits all of your needs, you should post a detailed request to the Services Wanted or Solutions Wanted forum.
