Another db I've worked with (GoldMine) can save exports so users do not have to select the fields they want to export each time they run one.

Yes, through Scriptmaker, you can create a script/button using the Export Records script step. You'll find some helpful options in the step, such as (1) specifying the fields, (2) specifying the file's type, name, and path, and (3) whether you want the script to run without a dialog box popping up on the user's screen. Your script becomes a "canned" action.
