I know filemaker server is the real way to do this, but our IT isn't budging. Is there a way to have a script or something that will create a backup (copy) of the DB file at a certain time each day?

You could have Task Scheduler to run a batch script at a certain time that basically stop all the hosted files, makes a backup copy to some location, and reopen those files.
