Special Order to Real Order

I am making a special order table in my POS system and I want to be able to convert it to a real order if the customer ends up getting the items that they want.

I am trying to relate the special order to the Line Items table which is connected to the inventory. Do I have to create an new table occurence to do this? It seems like I am missing something. I have never created new table occurrences, should it be avoided if possible?
