I do not want a field to be able to take in more sentences than will show during printing. How do I limit the field so that it doen't keep expanding as someone enters data?

You cant really do it, unless you use a font that has a consistent width (monospace). Different fonts can make certain characters wider and more narrow than others.

What you can do is either cut off after a certain number of characters or you can use validation to alert a user when they went over a certain number of characters.
