Is there a way to remove or not show items selected from a value list?

Example: If the value list is 1, 2, 3, 4 and in a previous record you selected 1 from the Pop Up Menu, can "1" be hidden or not shown for a series of records

I'm tying to use this for a scheduling solution and once I select a persons name I don't want to have it available for a series of records
