So... you would think I would know this but I don't.

How do I change my default font?? Every time I added a new field it is formated as bold, italic..blah and I have to go change it to what the rest of the layout looks like.

Set your font (and any other attributes) while no object is selected. Or command-click an object to set the default formats to the object's formats.
