Is it possible to disable all shortcut keys?

i.e. Ctrl F, Ctrl N etc. etc.

Yes by the privilege settings!

Yes, many of them by the Privileges, or by Custom Menus (less reliable). Or you can use Secure FM from New Millennium completely to remove and/or revamp these.
