Is there any problem with having two databases opened remotely at the same time (they're both on a FM Server)?

No problems.

FM Server can host up to 125 files at once. The FM Pro client can have more than 50 files open at one time.

Actually, I believe that limit went away with the introduction of the .fp7 format.
