I have a strange request of filemaker.

i have customers and jobs and several jobs going on at once.

I would like to create a form where I could log the day's work in one place.

Date of Service

Invoice number / Job / Rep (This line would be repeated

depending on the jobs done that day)

Then each customers invoice would be populated with the data.

Would I use several portals?

Have you looked at the example files that came with your FileMaker Application Disk?
