I would like to make the databases avalable to the web, do I need to be running a web app like Apache or : I could use some suggestions or any links to documentation would be great!

You need FM Unlimited.

If your traffic is low as up to 10 unique IP in 12-hour window or you just want to test you will use standard FM client.

In both cases you must enable WebCompanion.

This was discussed many times.

In short the URL looks like

http://URL:Port/directory/default.htm

Port can be omitted if 80.

Directory can be omitted is it is starting in web folder.

so basicall the question is

1. Can I share a database from a Mac OS X Box with just FileMaker Server?

2. do I need to also install and run the client from the Server to then share over the web?

1. NO

2. The client/unlimited machine has to be connected to web or web server can have WebConnector connected to this machine with client/unlimited.

Client/unlimited can get data from FM server

I need for these databases to be avalible from the web, I have installed the WebCompanion but can't seem to connet to the computer from a Browser, I have a DNS entry but still nothing.
