Yes, you will need to specify it as a custom header in your email in the format

EmailSetHeader( "Disposition-Notification-To"; "[email protected]" )

Is there a list of these cool things we can do with EmailSetHeader?

The EmailSetHeader function is just used to set headers in your email, so you can do anything that headers allow (headers are a standard part of all email communication). I don't know of a particular list of them, but I'm sure there are lists or guides available online.
