I currently serve over the LAN on TCP/IP and wireless with FMS on an i7 workstation running Windows 7 Professional to approx 10 FMP clients. It seems to work well.

I would now like to also serve via IWP to customers over the internet (maybe 20 or 30 at a time max). I will therefore upgrade to FMSA and have been suggested to move to Windows Server 2008 R2 at the same time.

Which version of Windows Server 2008 R2 should I get (ignoring purchase price)?

My options are Web Server, Standard, Itanium, Enterprise or Datacentre.

Thanks Steven, I should have read that more carefully.

I noticed back around FM7 you wrote a book on IWP and mentioned in a thread the limitations of IWP. Have things improved since then, and for my purposes do you think Windows Server and IWP is the best way to go?

I wrote a book on FileMaker Security, not on IWP. I use IWP for clients a good deal, but as a supplement to, not a substitute for, FIleMaker Pro client. IWP works well for some things, not so well for others.
