Can FileMaker Pro display blinking text? I'd like to show that something is incomplete by setting a text field to blink to alert someone that they need to work on something. Is this possible?

Not natively.

You can program script which will blink let say 3 times in 1 second and the will display “!” over whole display.

We do not have blinking here, probably because of platform incompatibility.

I am usually OK with calculated field, which has something like:

If everything is OK

display "" (empty)

else

display "!" (red and big)

endif
