The FTPeek docs are silent on being able to specify a specific port. Is there any way to use the flag parameters to specify a non-standard port?

To use an alternate port, simply append a colon and the port number to the end of the hostname. For example, if you were connecting to fakeftpserver.com and wanted to use port 1234, you would set the host to "fakeftpserver.com:1234".

This is covered in the documentation, but in a not-so-obvious spot: the description of the 'host' parameter.

Please let me know if you have any other questions!
