I'm curious if you think a CENTOS8 install would be viable?  I know Claris indicates 7.8, but it seems a shame to not to use the most current (1 year old) v8.

Don't do it.  Stay within support parameters.  The philosophy of CentOS is to favor stability and reliability and to NOT automatically jump to the latest of everything.  7.8 is still under Long Term Support until 2024 and is the most proven 'current' CentOS.
