I wan't able to fully follow your description. In general, if text in a field displays in different font or size or color, etc. than those set for the field in Layout mode, it is because the text is a rich text and has its own formatting. This formatting was either applied to the text in Browse mode or - much more likely - brought along when the text was pasted into the field.

To remove the formatting, you can use the TextFormatRemove() function. See also the notes here:
