I haven't had the opportunity to test it but does FMP Server work smoothly while the machine is "Not" logged in? Or does it end the processes?

Is it possible to "Lock" The server to prevent unauthorized fingers while it is up and running.

I know my first rule is to have a dedicated cage or server room. But for the folk who through the machine in the corner...

When you log off as a user from OSX it quits all running processes.....have you tried a passworded blank (to save system resources) screensaver?
