which database is open?

How can I find out, if a database is opened by the server or directly from my disc (except at the startup moment).

Because I keep a copy of the databases on my computer, sometimes there is an opening confusion and a local database is opened instead of the related from the server.

In FMP 5.5 on OSX, choose Sharing... from the File menu and it will tell you if the file is being served.

Use the Status(CurrentHostName) function.

Personally I'd scour the hard disks in local network for copies of the server-hosted FMP databases and zip or delete them all. Otherwise it'll only end in tears.
