I have a category dropdown list which is also editable but the problem is that a number of the options on the list need to be multi select i.e they can belong to more than one category. How can i change the drop down so that it can handle multiple selections? (without having to have mulitple dropdowns or having to add in names with cover more than one category)

Any help would be great!

How about using checkboxes? If you don't have enough "real estate" for your list you might consider a separate layout just for that.
