If you mean the main application window (WinOS only, not relevant in MacOS) -- you probably cannot, unless you use a plug-in or create a bound runtime solution.

To change the title of the window that the file appears in you use the "Set Window Title" script step.

The plug-in Vaughan might be referring to... well I that's a windows issue - i don't know of one that exists... but then I'm a mac freak

As for the runtime - this is what you do

You purchase a copy of FileMaker Developer (not Pro)... Developer is like Pro, except that using it you can turn the databases you create into stand-alone applications - when you do this of course the Main FMPRO window that you mention in your first post becomes the NAME of whatever you happen to call your run-time database (solution)...
