I have text entries in a portal how would i add the number of entries together for only one record

Check out the Count() function.

If by adding to create one record you mean to 'concatenate' multiple rows of text into one row?....

Loop through the portal, setting a global field to itself plus the contents of the new row and a 'return' character.
