We recently upgraded to Filemaker 7.0. We have about 10 users. We currently save the name of the modifier and the date and time of the last modification. Now we want to have a list of 1.Modifier names, 2. Fields modified, 3. Date and time of the Modification. Having a button on the layout and having the user click that is not an option. We want this to be done automatically.

Do a google on "filemaker audit trail", I'm sure it will turn up some examples. Basically you'll need to add an audit logging mechanism to your files. Scripted or calculated, that checks who changes what field when from what to what.

Check out the Audit File being discussed in the Sample File Area of this Forum, by BobWeaver (there are more than one, as the recent title suggests).
