Populate fields based on Customer

i want to populate fields based on a customer name. So for example, Customer A ships to a certain place, gets a certain discount and so on. i have done that but how do I go about making sure that the information cannot be cahnegd by the end user. Right now I have a seperate db set up with the info I pull in and it works fine, but I can change the info too easily.

Go to layout mode, select field format and under field behaviour you can elect whether to allow the user to edit the field.
