I am currently building a multi-file database in FM 8 Advanced.

My files all live in the same folder.

I would like for most of these files to be available through the server but want to make sure addressing issues are minimized.

Can I install these all of these files by just installing the folder onto the server, or does each file have to be installed one at a time?

I have Server 7 on a dedicated IMAC G5.

I could upgrade to Server 8 if necessary.

You can put your entire project folder into the Databases folder. Just be sure to check that the permissions of the folder and the files within get set to allow "Read & Write" permission to the Group "fmsadmin".

One thing to be careful about though: you said you want some files to be available through server but not others. If you move your whole folder to the server, it will be tempting to share that folder so that you can get to the files that are not hosted by FMS. Don't do that. The chances of you or anybody else opening one of the files through OS file sharing instead of through FMS's sharing routine are high and that will lead to file and/or data corruption in the long run...

If you do not want a file to be hosted as your question seems to imply, why are you putting it on the Server?
