If I have a table of 50,000 words every day, is there a function that can compare the new table to the old table and spit out the changes or differences?

You might check out the FilterValues function.

It's really used to return the intersection of 2 sets so I don't know if it will work for you

I came across the function in the Filemaker 7 function.

I haven't tried it but you would have to put yesterdays words into a global text field and then compare against your current table to find the intersection of the sets then show the omitted.
