Linked to all my orders I have necessary artwork that I have supplied to me by means of a pdf file.

Why can I not view a pdf as I can a .jpeg file?

Otherwise, how can I link to the pdf documents so I can view the related documents.

Is it possible to ensure that only the related pdf document has a link to a unique ID field within filemaker??

Unfortunately you can not view PDFs in 8 on Windows like you can on the Mac, which they would show up similarly to how JPGs do.

In the past I have just stored an URL to the PDF and use the Go to URL script step to open the PDF in a web browser this then will load it in Acrobat Reader (if installed).

With the new Web Viewer in FileMaker 8.5 you can now do this directly in FileMaker displaying the URL using the Acrobat plugin.
