I have a value list that has grown too large to manage effectivley. Is there a way that the value list can be sorted alphabetically when the pop-up window displays? :/

You probably want to change the list to one that is based on a field. For more information, open your ONLINE Help in FileMaker, and then search for [color:blue] Defining a value list for data entry.
