Is it possible to click on the column field label in "View as List" mode and have it perform a script?

View as List, yes. View as Table, no -- at least, not the automatic column headers. You can turn off the column headers in the layout options though, and put your own buttons in the header part just like you would in List view. But then of course you lose the functionality of the column headers. You can replicate the sorting with scripts, but not the moving and resizing.
