Instead of hard coding a field's name in the Go To Field script step, I am wondering if there is a way to put a field's name in the script parameter box at the bottom of the Specify Sript Options window?

Since version 8.5 the scriptstep 'go to object' is able to activate a field according to a scriptparameter.

Is there a workaround in FM 7.03?

I know only a very ugly one: step from field to field using 'go to next field' and searching the right one.
