I would like a date field were I can press the key 'T' and todays date is inserted. If I then press + or - the date will step up or down by one day - any ideas anyone

Well, ⌘ - inserts today's date.

As far as moving the date up or down in increments of one day, could you live with a set of + and - buttons right next to the field?

Here's a simple solution. You did mean a button not a key, didn't you?

I done this in 'Access' were the date field had a visual basic code running so if the 't' or '+' or '-' key is pressed then the date was inserted or stepped up or down.
