When using the Send Email function in the subject line can you specify more than one field?

You can specify a calculation that draws from as many fields as you require.

so would I have to define a field in the table in which the calculation refers to the various fields? If so could you provide an example?

No, the Send Mail script step allows the subject (and other parameters) to be drawn from a field or a calculation.

Click the Arrow on the right side of the dialog, and select "Specify Calculation..." from the menu.

Found "Specify Calculation", however when I tried to add a field(s) in various places of my text, I get the error message:

"the specified table cannot be found"

I think that I am missing something. What did I do wrong? Am I missing a parentheses, semicolon or ...?

I am guessing you're missing the table occurrence of the field. Enter the field by double-clicking its name in the list, to understand how it needs to look.
