I want to be able to edit multiple records at one time. Does anyone have any idea how I can allow a user to select the records to edit and then apply the change to that record?

You can do it with JavaScript. But it will be quite difficult.

You can also try to it with FM scripts, but if you have just single Unlimited running, that will be the most unreliable thing to do. With RAIC (e.g. 5 FMU powered by FM Server) it can just work let say 90% reliable.
